Tropical Overnight Oats

Hello everyone! Can you believe it’s almost April??? I can’t believe how fast this year has seemed to go by. Before you know it, Summer will be here. Time for flips flops and fun day trips :D.

To get me in the summer mood, I concocted this recipe that reminds me of summer days. It has fresh kiwi and coconut. Yum…

Here’s the recipe.

Ingredients:

1/2 cup oats

1/2 cup unsweetened vanilla almond milk

1/4 cup nondairy yogurt alternative( I use Silk brand plain)

2 packets stevia

1/4 tsp lemon zest

1/2 tbsp. unsweetened shredded coconut

1 kiwi diced

Method:

Add the oats, almond milk, yogurt, stevia, lemon zest, and coconut into your jar. Mix until well incorporated. Top with a freshly cut kiwi. Refrigerate overnight and enjoy in the morning!

    Question: If you used a flavored yogurt (I like Silk Vanilla) instead of plain, could you forego the stevia? Thanks. 🙂

    1. Good question. It really all depends on how sweet you like it. If you are using the vanilla instead of plain, I think you could get away with one packet of stevia or a few tsp of honey.
